
Pork on omelette.
Here is a low-carb dish with pork strips, omelette, eggplant and peppers.
The pork is added on top of the omelet, so therefore the name.

1) 240 gram pork fillet strips.
2) 2 eggs.
3) 25 gram leek.
4) 75 gram peppers. red, green and yellow. In cubes.
5) 2 tablespoons cream.
6) 2 tablespoons grated parmesan.
7) Salt and pepper.
8) 4 thin slices eggplant.
9) 4 mushrooms into pieces.
Roast pork in some butter. Spice ass salt and pepper. Take the meat out of pan and let it rest.
Fry the eggplant, mushrooms, peppers and leek. Make the Omelette. (mixed eggs, cream, grated Parmesan cheese and pepper). When everything is finished, use a round shape, 10 cm in diameter, and then adds layers eggplant, omelett- again. Paprika and pork strips peaks court. Some peppers and basil as a garnish.
